Once A Month Cooking
I am being inspired by Erin aka JANE4girls. She has been posting recipes for once a month cooking. I love the latest one using potatoes and thought I would share it with you. Here is the link: OAMC.
There used to be a teacher at Bethesda Christian School in Fort Worth, Texas that inspired me with her weekend routine: make a pot of potatos, make a pot of pasta, make a pot of rice. Throughout the week, she would have the 'basics' ready for her to be creative at short notice for mealtime. Also, bought sweet potatos from an 86 year old lady last weekend that says she bakes a whole oven full of them at once, then freezes them in portions to use throughout the winter. Kind of a neat idea too.
Light of Life International is the compassion and crusade ministry of Stephen and Alisa Evans. Our desire is to know Jesus and to make Him known. There is nothing like life with Jesus!

That is a great idea! I love sweet potatoes and they are really nutritious, too.
